Seriously Pressed
A few weeks ago, YouTube follwer Robert Samuelson sent me a handmade light-weight Dutch press. If you like it, great, he said, and if not, pass it on to someone else. Well, let me tell you, this cheese press isn’t going anywhere.
This slender beauty has super pressure power (check out this video he did to test just how much weight the press could hold before breaking!), and now for the first time I’m getting cheddars with silky smooth rinds.
Furthermore, the pressure is consistent, which is a welcome improvement. (With the spring-loaded press, the pressure lessens as the cheese becomes more compact, requiring one to manually adjust the pressure several times throughout the pressing). Robert sent me a calculator thingy to figure out how much weight I need to hang on the arm to get the specific amount of weight, but mostly I just pour a little water into the bucket and then add more as needed. It doesn’t take much!
The contraption takes up more space on the table, but I’m more than happy to give up space in exchange for the ability to press my cheddars into glorious submission. Between uses, I store the press on top of the piano because it’s pretty enough to qualify as a piece of art.
