It’s designed to help people better understand what’s happening during the process so they can begin thinking like a cheesemaker, not just following recipes.
Over the course of about 45 minutes, we’ll cover:
- The Milkslinger philosophy and framework for making virtually any kind of cheese.
- How to encourage the good bacteria while keeping unwanted microbes in check.
- Natural cultures, including a demonstration of how to maintain a healthy clabber.
- A look at several different cheesemaking methods and how they shape the flavor and texture of the finished cheese.
The second half will be devoted entirely to Q&A.
