Are you curious about the science behind cheese making? Would you like to deepen your understanding of the cheese making process? Are you interested in gaining some hands-on, practical, cheese-making experience? Do you want to learn to reliably make a simple fresh cheese from scratch? 

Participants will:

  • Learn about cheese making basics: rennet, cultures, and milk.
  • Make cuajada, a salty, fresh cheese from Central America.
  • Visit the cows and learn about the milking process.
  • Tour the “cheese caves.”
  • Sample a variety of homemade cheeses.
  • Eat a hearty snack of beans, homemade corn tortillas, and fresh cuajada.
  • Receive a goodie bag with a printout of the cuajada recipe, rennet, and some of the class-made cheese.
